Quinoa Upma

Heat 1 tbsp oil in a pan and add 1/2 tsp of mustard seeds.Once the mustard seeds begin crackling, then add 1/2 tsp cumin seeds and ½ tsp moong dal. Stir and saute on a low flame.Saute till moong dal turn golden. Add 1/2 tsp finely chopped ginger, 1 tsp chopped green chillies, chopped, and 1 dry red chilli. Saute for about half a minute/Add 1/2 cup finely chopped onions and let it saute for few minutes in low flame.Choose your choice of finely chopped veggies like carrots, peas, etc and mix them well.Add 1 cup od True Elements Quinoa and mix well. Let it saute for 2 minutes on low flame.Add 1 cup of water, pinch of salt and mix well. Cover the lid and let it simmer for 15 minutes in low flameStir it once and serve it hot.

Quinoa Patties

Combine 2 cups of cooked quinoa, 2 eggs, and 1 tsp of salt in a medium bowl. Stir in the 1/3 cup chopped onion, 1/3 cheese, and 3 finely chopped garlic cloves.Add 1 cup of bread crumbs, stir, and let sit for 5 minutes so the crumbs can absorb the moisture.Heat the 1 tbsp olive oil in a skillet over medium-low heat, add the patties with some room between each.Cover, and cook for 10 minutes or until the bottoms are deeply browned.Flip the patties with a spatula and cook the other side for 5 minutes, or until brown.Take it off flame and enjoy!

Quinoa Fried Rice

Toss the 1 cup quinoa straight in a saucepan and allow to toast on medium heat for just a minute while you stir to prevent burning. Add your 1/2 cup of water. Bring to a boil, reduce to low, cover and simmer for approx 10 minutes or until it fluffy.Take it off the flame and stir.Serve it immediately.
