Plum Quinoa Smoothie

Ingredients:

1 large ripe plum pitted and cut into chunks, 1/2 large frozen banana, 1/4 cup cooked quinoa, 1 cup unsweetened almond milk, 1 teaspoon pure vanilla extract,1/4 teaspoon cinnamon, 4 or 5 large ice cubes.

Directions:

Combine all ingredients in a blender and blend until smooth.

Ingredients:

Quinoa 1 cup, Jaggery 1/2 cup, Butter / ghee 2 spoons, Milk 1/4 cup, Water 1 spoon.

Directions:

Wash quinoa thoroughly, drain water. Spread the quinoa on a dry kitchen cloth and let dry for a day. Now grind the quinoa, just like Soji / semolina. Heat butter in a non stick pan and add grounded quinoa and roast on low flame. Keep stirring to roast evenly. In a separate sauce pan add jaggery and water. Let the jaggery melt completely , filer out all the impurities and add to the roasting quinoa. Warm the milk separately and add to quinoa mixture. Mix well to form a nice dough. Remove from heat and let cool for sometime. Now apply ghee or butter to your palms and make round ladoo with the dough.

Ingredients:

2 cups water, 1 cup quinoa, rinsed, 2 cups fresh baby spinach, thinly sliced, 1 cup grape tomatoes, halved, 1 medium cucumber, seeded and chopped, 1 medium sweet orange pepper, chopped, 1 medium sweet yellow pepper, chopped, 2 green onions, chopped.

Directions:

In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork. Transfer to a large bowl; cool completely. Stir spinach, tomatoes, cucumber, peppers and green onions into quinoa. In a small bowl, whisk dressing ingredients until blended. Drizzle over quinoa mixture; toss to coat. Refrigerate until serving.
